Herbal Ally: Mysterious Mushrooms

As the summer evenings turn to autumn, the Catskill mountain forests in upstate New York become filled with magical, mysterious, and healing mushrooms. The mushrooms that sprout between rains can be called “Toadstool”, but “fungi” more technically describes them. Fungi refer to plants, but are not plants with roots or plants that contain chlorophyll. Mushrooms are a perfect addition to any witches’ stew. They can take on strange forms, some of which may be very sexually suggestive. However, you’ll need to find other reasons for mushrooms being a part of your regular diet. It’s true. It’s true. All edible mushrooms, even those white button mushrooms you find in supermarkets can reverse or prevent cancerous cellular changes. We don’t know the reason. Perhaps it is because fungi are able to find and concentrate the trace minerals needed for strong and healthy immune systems. You could also attribute it to their rich supply of polysaccharides (interesting complex sugars which appear to be all-round health-promoters). The mushrooms are rich in protein and B vitamins. They also have low calories and very little sodium. One could also single out the anticancer, antitumor and antibacterial compounds found within the stalk, caps or gills of all edible mushrooms.

Cook your mushrooms well. Researchers at the University of Nebraska Medical School have found that mice who ate unlimited quantities of raw mushrooms (Agaricus biosporus), developed significantly more malignant tumors during their lifetimes than mice who ate control foods.

August and September are my favorite months. I enjoy walking barefoot along the vibrant green mosses, or lightly stepping on the deeply-scented fallen pine needles and hemlocks. I also love climbing rocky outcrops covered with ferny whippers or skirting swamps humming from mosquitoes.
